Description
This early-harvest Novello extra virgin olive oil is produced using locally cultivated Itrana, Frantoio, and Leccino olives at the Quattrociocchi Estate located in Alatri, just south of Rome. The aroma of the oil is both herbaceous and fruity, featuring subtle hints of green olive, complemented by intricate vegetal notes of freshly cut grass and green tomato. Its flavor is delightfully fresh and harmoniously balanced, having a pleasantly bitter and peppery aftertaste. This oil pairs excellently with appetizers such as beef carpaccio, marinated tuna, and creamy artichokes, in addition to swordfish, grilled game, aged cheeses, and sausage pasta.
