This balsamic-style vinegar from Pago Baldios San Carlos is made exclusively from the must of Pedro Ximenez grapes. These grapes, from a unique vine variety, are aged for more than five years in American Oak barrels.
The vinegar matures using the traditional Criaderas and Soleras system. This process gives the San Carlos Gourmet Grand Reserve Vinegar a distinct personality and extraordinary concentration, resulting in a powerful aroma and a deep mahogany color.
