Full Moon Grand Reserve Balsamic Vinegar
This balsamic vinegar is produced by Pago Baldios San Carlos in Extremadura, Spain. It’s made from a selection of Pedro Ximenez sweet grapes, which are air-dried to increase their sugar content. The vinegar then undergoes a 12-year process of acidification, maturation, and aging.
As a result, it has a dark mahogany color and a very well-balanced, persistent taste. The flavor profile includes exceptional notes of raisins and caramel, with nuances from the aging barrels. This vinegar is a versatile condiment that pairs well with the Full Moon EVOO for dressings. It’s also an excellent choice for salads, marinades, fish, seafood, and meats like duck or veal.
