Ecological extra virgin olive oil cold extraction and early harvest. In the nose, fruity medium of fresh grass, harmonious and persistent.
In the mouth, medium bitterness and a slightly pronounced spicy touch appears, with an aftertaste of chlorophyll and fresh lettuce.
Oro del Desierto Coupage olive oil
Extra virgin olive oil Oro del Desierto Coupage, particular selection made by our mill Master, from olives harvested at the end of October and the beginning of November.
Our olive grove has the luck and privilege of being virtually in the desert. It is the driest area of Spain, which helps us a lot to control pests. For example, we almost do not have Olive Fly.
With so much dryness it does not favor its reproduction and prefers to go to more humid olive groves.
This brings another benefit and that is that we do not need to use chemical compounds to fight against these pests. Therefore we reduce costs and do not alter the original taste of the oil.
How to store Extra Virgin olive oil
Keep your Oro del Desierto in a dark place, (ultraviolet rays can break down an olive oil over time), away from the stove and other heat producers. The reason is that EVOO exposed to warm temperatures will begin to oxidize and eventually turn rancid.
Also, you can put the remaining oil in the refrigerator, but it will solidify and turn cloudy at cold temperatures, but that does not alter the health benefits or nutritional value.
A ceramic cruet is especially good for storing olive oil because it not only blocks out light and air, but the thick ceramic walls help block out heat too.
However, if you’re going to use a cruet, you have to wash it throughly before you refill it each time.
Otherwise you’ll be mixing older oil in with your fresh oil, which will of course affect the oil’s taste.
