Jaén is the olive capital of the world, producing more alone than the second biggest producing country of extra virign olive oil: Italy. The most extensive variety of Jaen is picual. The olive oils extracted from the picual variety can be differentiated at the moment of collection. Those which are collected earlier have hints of green grass, tomatoes and aromatic grasses while those collected later have hints of figs and artichokes. They are usually full of bitterness and spicyness.
